Pork Restock!

This year, we farrowed 16 piglets in May and finished them out for processing the end of this month. They’re Berkshire/Yorkshire cross. We plan to save 4 gilts from this litter to breed to another heritage boar. We hope to attain a little darker, more flavorful meat this way. If you’ve gotten pork from us before, you may have noticed that it doesn’t taste real similar to what’s available in the grocery store. That’s because we custom blend their feed and raise them in deep bedding. Both of these things tend to add to a more robust flavor.



We saved back 5 whole hogs, for ourselves, which were processed at Jones Meat & Locker in Jacksonville, for retail cuts. We have these available at our retail outlets, as of today! We also offered up 5 hogs to our communities for bulk shares (halves, whole, etc). We plan to haul those to Dutch Valley in Arthur later this week. We will end up having a couple of extra hogs, that we will most likely process ourselves. Or maybe we’ll turn them into whole hog sausage, who knows! But it’s always prudent to have extra when offering shares, because with livestock, anything can happen!



Jones is so great to work with. They’re flexible, personable and very helpful in navigating the world of processing. This season, we decided to offer more ground pork options. We based this decision off of what “moved” the best for us, this past season. Our premade, seasoned porky burgers and sausage patties went first, then our ground pork and sausage. Bacon was next, followed by chops, and so on. We noticed a trend with roasts, hams and ribs though, that they were slow to move. Maybe because they’re not as “user-friendly”? Anyway, we scaled back on those and increased the amount we had made into quicker-cooking options. We should be stocked on sausage patties, seasoned porky burgers, brats & ground pork for a while, hopefully!🤞🏻And we are even offering a new item, although we’re not sure how long it will last?! So be sure to get your hands on a package of our new baby sausage links, before they’re gone! We cooked them up for breakfast this morning and they were just fabulous!




We feel fortunate to be able to continue to provide locally-raised options for our surrounding communities. Although it is a lot of headache some days🥴, we feel that it continues to be worth it in the end, to provide traceability, with the food that is going onto your table. We understand there’s much confusion surrounding food these days and we hope to continue to be a trusted source for your families.
